Getting real hungry when thinking of these delicious filled pancakes. Your too? Then let's get started: First, whisk together the eggs, milk, flour and 1 teaspoon of salt. In a pan with heated oil, fry four pancakes, one after the other, until golden brown. Dice the tofu and fry it in the remaining fat. Add some tomato paste and fry as well. Tofu is ready? Great! Now add the strained tomatoes and the sauerkraut and bring everything to boil.
Next, fill the pancakes: To do this, first season the tofu mixture with honey, salt, pepper and paprika powder and spread evenly on the pancakes. Roll them up and place them side by side in a baking dish (about 25 x 25 cm). It's that easy!
The basis for our sauce is a roux. For this you just have to melt the butter, sprinkle it with flour and sauté while stirring constantly. Then pour in the milk, bring to the boil and season with salt, pepper and nutmeg. Do not forget to stir vigorously to avoid any lumps and burning the milk. When you notice that the sauce is thickening, it is ready and you can spread it on the pancake rolls. Finally, sprinkle with cheese (the best part!) and bake the filled pancakes in a preheated oven at 200 °C for approx. 20 - 30 minutes.
